Day 3 - Bagels!

Hi! I hope everyone had a nice day! Day three was another success. I picked up my car keys from the student life office around 8:45 and headed off to Patty’s house. Once I got myself set up in her kitchen I laid out my supplies and got to work. I decided to make four batches of bagels, each batch makes 8 bagels. Patty has a large stand mixer that made the beginning of the process much easier because I didn’t have to do all the kneading by hand. I put the batches into bowls covered with a lid or towel and let the dough rise for at least an hour.
I used that time to drive to Hannafords and pick up some ingredients I’ll need for the rest of the week. It hurt me to put a few things in my basket, like the boxed cake mix and the Crisco. I’d never normally use these, but sometimes you gotta do what you gotta do. When I got back to the house the dough was so puffy! I knocked the extra air out and then got a pot of water with honey on the stove. Before I started baking bagels I had no idea that you boil them before you bake them! I know it sounds strange, but it helps give it the right texture.
After I finished boiling all 32 of them I split them in half and coated 16 with just an egg white and water wash and the others with the wash and everything bagel seasoning. At home, I have a 5-pound container of that seasoning! While they were in the oven Patty came back and started to finish up her baked goods.
I left around 2:40 to head back to campus for rehearsal. Today I spent 5 hours working which brings my total up to 10 hours. I’m super excited to share the bagels with the rest of the Proctor community! I’ll be up bright and early tomorrow to get the Bluebird trailer all set up. I can't wait to see how my first day on the other side of the counter goes! - Sophie
