Blueberry pie (well more like cake, but it's what the recipe said)! Day 8

I got a late start today and decided to stay on campus to bake instead of hiking. I was going to bake right outside my dorm, but it was so windy I wanted to find a more sheltered location. I settled on the Outdoors Center. I went on the pavement along the side of the building.
It seemed perfect at first until the wind changed directions. I just kept going because this could be a problem someone else might face in the backcountry and I was lazy and didn’t want to move my setup. I started by pouring the water and oil into the bag with the homemade all-purpose baking mix. I mixed and kneaded the ingredients together in the bag and then poured it into my fry bake lined with parchment paper.
I topped with blueberries and started setting up the stove.
This was my first time using the new one and it was already better than the first one. It took me 4 or 5 tries to get it started. I think it was more operator error than anything else. I ended up texting Patty asking for help and when I tried one more time after it worked! I placed the pan with the outback oven on the stove and set a timer for 12 minutes. Patty came by and we talked while it was cooking. After the 12 minutes were up I turned off the heat and let it sit covered for another 5 minutes.
I was a little worried about what I was going to see when I uncovered the pan, but to my surprise it was great and the bottom wasn’t badly burned!
It was a little sour from the blueberries, but overall I was happy with how it turned out. This is a great recipe and I was able to jot down a bunch of notes to add to the cookbook! When I got back I cleaned up and watched some Youtube videos on backcountry baking.
I think now I might have to try making a calzone. I worked for 4 hours today which brings my total to 28.5 hours. I’m back at Patty’s tomorrow so stop by to see how my donuts turn out! - Sophie

Yum!! This pie/cake looks really delicious. Looking forward to seeing a calzone!
